Brownies

Brownies are potentially my favourite way to consume chocolate. The taste, yes, but it is the texture that especially appeals.

Preheat oven to 350 F.

Melt:

8 oz unsweetened chocolate and

¾ cup butter 

In a separate bowl, beat eggs until frothy.  Add sugar, extract and then stir into chocolate mixture. 

3 eggs

1 ½  cup sugar

1 tsp peppermint extract

Add ¾ cup flour and mix well.

Pour into buttered 9×13 pan and bake 20-25 minutes until finger does not indent.  Do Not Overbake. Cut once cooled, if you can wait… These have a bit of a crisp top with a fudgy interior – delicious!

*I have also made these as little Easter eggs, which are the perfect size.
