September is apple month and I love apple in anything. I feel like pumpkin spice has overshadowed the apple in recent years, but this is one of our favourite, very simple apple traditions. We just add half a teaspoon of cinnamon and nutmeg to our regular pancake recipe and then top the cooked pancakes with stewed apples. To make the stewed apples, peel and chop apples, add 100ml of water and a sprinkle of cinnamon and simmer in a covered pot until apples are tender. Perfect for a fall breakfast!
