This is a perfect Friday night dinner if you are staying in and getting cozy. The lingonberry jam adds a bit of fruity tartness to the cream sauce.
500 g pork tenderloin, cubed
1 Tbsp. oil
1 Tbsp. flour
1/2 tsp. each salt and pepper
1 tsp. soy sauce
1 chicken stock cube, crumbled
1/3 cup lingonberry jam
1.5 cups cream
Brown the pork cubes in the oil. Stir the flour into them and then add the rest of the ingredients. Simmer slowly until the pork is cooked through and the sauce is thickened – 15 minutes or so. Serve over rice.
