I’ve been trying out different simple pizzas this summer, cooking many of them on the grill outside. We really liked the feta cheese with this combo. I used my usual thin crust pizza dough as the base for this one.
100 g mozzerella, grated
60 g Boursin shallot and chive cheese
1 leek, cut in half length ways and sliced
5 slices bacon, chopped
1/4 cup feta, crumbled
1/2 small zucchini, sliced thinly
Fry up the chopped bacon and add the leeks to soften them. Spread the Boursin cheese onto the pizza dough, top with the zucchini, bacon and leeks. Top with feta and grated mozzarella cheese. Bake at 450 for about 15 minutes, or until bottom is crispy and cheese has melted.

This looks delicious! I am usually super traditional with my pizza, this is a great reminder to branch out and try something unique!

So is my husband. Lol. I just call it flatbread instead of pizza to avoid messing with tradition and he loves it.
