Oat Spice Cake

This is what I would call a “hearty” cake. It is not fluffy confection, but a robust, textured dessert. I like to serve warm it with warm chunky applesauce. It can also hold its own in a backpack, arriving to your destination in one piece.

RECIPE

  • 1 1/4 cups boiling water
  • 1 cup rolled oats

Pour boiling water over oats and let them sit for 15-20 minutes before proceeding to soften the oats.

  • 1/2 cup olive oil
  • 1 cup honey
  • 1 tsp. vanilla
  • 2 eggs, beaten

Combine the above and add to soaked oats. 

  • 1 3/4 cups whole wheat flour
  • 1 tsp. baking soda
  • 1/2  tsp. salt
  • 3/4 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 3/4 tsp. ginger

Mix the dry ingredients together and mix into the olive oil and oat mix. Put in a greased 9×13 pan.

Bake at 350 degrees F for 40-45 minutes or until middle of cake springs back.
