The taste of summer

This is a quick and tasty addition to any summer lunch. Fresh basil with tomato and mozzarella, grilled until fragment and melty, has been my go-to sandwich for the last couple weeks. My basil plant is bushing out nicely, and I love the smell of basil leaves as much as that of any flower! Summer in a sandwich!

Just put a bit of olive oil in the pan, add a slice of bread, cheese, tomato, basil, and the other slice of bread. Flip to brown second side as well.
Voila!
