Spaetzle

This is one of my favourite kinds of noodle. I was given a press by a dear friend many years ago and it is fun to use. Here is the basic recipe for these German noodles.

2 cups flour

3 eggs

1/3 – 1/2 cup water

1 tsp. salt

1 Tbsp oil

Using the bread hook on a mixer, knead the flour, eggs and water for 10-15 minutes or so to make it stretchy.  Let the dough rest.  To a pot of boiling water, add the salt and oil.  Load the press, and squeeze the dough out, dipping the press to release the noodles at the end. The noodles will float when they are ready, in 1-2 minutes.  Remove the cooked ones and strain them.  Continue until all your dough is cooked. (You can also form the noodles by scraping bits of dough off a cutting board with a knife if you don’t have a press.)

They are delicious with the gravy from stew, goulash or schnitzel. You can also top them with onion and bacon.  These freeze well.
