Happy Easter! We had our Easter luncheon today so I thought I’d post what we had in case you are still looking for ideas for tomorrow. Most are links to other recipes on my blog, but there are a couple I made from other sites, which I have linked to.
These Bacon Wapped Turkey Sage Meatballs are always a hit. You can make them in advance and then just reheat them.
Creamed Chicken Tarts
Dock and cook tart shells at 375 for 12-15 minutes.
1 Tbsp. butter
1 Tbsp flour
1 cup milk
1 cup chopped cooked chicken
1/2 cup peas
1/2 cup sauted red onion
Make a roux by cooking the butter and flour together for a short time, slowly add the milk, whisking out the lumps until smooth. Cook a few minutes, stirring constantly, until mixture thickens. Add the red onion, peas and chicken. Season with salt and pepper.
Add mixture to shells and cook for 10 minutes.
Broccoli Salad
I used this recipe from Sugarspunrun to make this broccoli salad. It is a good version as there is not too much dressing.

Our friends introduced us to this fabulous asparagus recipe found here. Asparagus coated in mayo and mustard, dipped in Parmesan and panko, baked in the oven. Easy and very yum.
We also had Stuffed Potato Casserole and green salad.
Dessert was also a birthday cake – angel food cake topped with whipped cream icing.
