This is a really simple whipped cream “icing” that we particularly like for angel food cakes as it is light and airy as well. It has only three ingredients – whipped cream, jello powder and icing sugar. The icing sugar stabilizes the whipped cream so it doesn’t get runny and is easy to pipe. Strawberry jello is my favourite flavour to make this with, but other flavours are good too. This one is made with “blue fruits” flavour. This makes enough to cover and decorate an angel food cake.
3 cups whipping cream
3/4 cup icing sugar
6 Tbsp. jello powder
Combine and whip with an electric mixer until it holds its shape well. Keep an eye on it because it whips up faster than plain whipping cream.
