I made a “use what you have” appie recently that turned out really well. I sliced a baguette, topped it with Boursin garlic and herb soft cheese, added a basil leaf and a roasted grape tomato. I can see this becoming a summer weekend favourite.
(To make the roasted tomatoes, cut grape tomatoes in half, brush cut side with olive oil and put in an oven preheated to 400 degrees F. for about 20-30 minutes)

And I sandwich my grape tomatoes between yogurt lids and cut them in half with a bread knife a whole bunch at once. So fast when you reeeeeally want that appie😊
