Lavender Lemonade

To kick off drinks week on the Cheer…. Lavender Lemonade!

I like to make a sugar syrup to make lemonade because I don’t like little undissolved crystals in my drink. I have occasionally flavoured it with mint, but decided to try lavender, since my plants were just about finished blooming. I am glad I did as it has become an instant favourite in the house.

2 Tablespoons lavender flowers
1 cup sugar
1 1/3 cup water

Combine all and bring to boil. Boil 1 minute. Cover to hold the heat, and steep 20 minutes. Strain. I store this in a glass bottle in the fridge and use it as wanted.

Lavender Lemonade
1 Tablespoon lemon juice
1 Tablespoon lavender syrup
1 cup of cold water

This makes a nicely flavoured water. If you like a more puckery lemonade, you can certainly add more juice and syrup to your glass. I find this to be a good balance to my taste: refreshing, fragrant and embodying the scent of hot, dry summer.
