The second base in our Drinks Week series is Mint syrup, which I use to make a Lime and Mint Refresher.
1 cup sugar
1 1/3 cup water
3 sprigs of fresh mint
Combine them in a pot, bring to a boil and simmer for 1 minute. Remove from heat and cover pot. Let steep for 20 minutes. Strain and refrigerate syrup.
Lime and Mint Refresher
1 T lime juice
1 T mint syrup
1 cup water
Mix together and serve over ice and with a slice of lime.
If it happened to be Gin Time, you could add a shot of that to this drink and feel equally well content.
