I used some of a batch of my Maple Granola to make granola bars last weekend. The added flavours? Peanut butter and chocolate, as there is no one allergic in the house at the moment. Mwahaha. These are really easy and set up quickly.
2 1/2 cups granola (I used the granola recipe in the link above, but if you have another favourite, give it a whirl)
1 cup chocolate chips
1/2 cup peanut butter
Line a bread pan with parchment, leaving it hang over the edges so you can remove the whole thing to slice easily. Melt the peanut butter and chocolate together. (I did 90 seconds in the microwave). Add the granola to this and stir until it is evenly mixed. Pour onto the parchment paper, spreading evenly.
Refrigerate until firm. Lift the parchment to remove the big rectangle and slice crossways into strips. Voila. Granola bars.
