We love “Yorkies” at our house. With some nice beef gravy over the top, they can’t be beat. I like to make individual ones rather than one large pan of them.
Yorkshire Puddings
1 cup ml milk
1 cup flour
3 eggs
pinch salt
oil/beef drippings
Preheat the oven to 450 degrees F.
Mix the batter ingredients together. Let rest 10 minutes. Do not skip this step. You can let it rest even longer because it relaxes the gluten in the batter so they rise beautifully.
Preheat a muffin tin with 1 cm oil/beef drippings in each section. You want the oil to be very hot so the batter starts to “fry” rather than absorb the oil. Pour the batter into the cups. Cook for around 15-20 minutes until crisp and puffy. Don’t open the oven door before then or they might “fall”.
