Thai Chicken Curry


This is an easy dinner, and something different to do with chicken.

1 Tbsp. oil for pan
5 cloves minced garlic
1 tsp. grated ginger
1 1/2 tsp. yellow curry paste (I used Thai Kitchen brand)
150 ml coconut milk
1 Tbsp. lime juice
1 Tbsp. soy sauce
1/2 tsp. sugar
1/2 of a chopped onion
a handful of sliced snow peas
2 chicken breasts, diced
1/4 cup roasted peanuts
1/2 red pepper, diced

Heat oil in pan. Cook the chicken breasts. Add onion garlic and ginger and cook until light brown. Stir in the curry paste, coconut, soy sauce, sugar and lime juice.
Add the vegetables and peanuts to heat through.

Serve over the rice of your choice. I like jasmine.
