These zucchini muffins are delicious.
2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. cloves
1 tsp. salt
1 egg
1/4 cup oil
1/2 cup sugar
1 cup zucchini, grated
1/2 cup milk
Grease muffin pans and preheat oven to 400 degrees F. Mix the dry ingredients together. Set aside. Beat the egg until frothy and then add the other wet ingredients to it. Stir this into the dry ingredients. Fill muffin cups 3/4 full and bake for 20-25 minutes. No fuss, no muss. We like them warm with butter, or cold with a little slice of cheese.
