When I cleaned out the pantry this week, I found a lonely Terry’s Chocolate Orange left over from Christmas. I had a hankering for oatmeal cookies and thought the two might be good friends. I used my recipe for oatmeal raisin cookies, but swapped out the raisins in favour of chocolate. Such a good choice. And by the way, Terry’s Chocolate Oranges trump chocolate chips in every way.
Terry’s Chocolate Orange Oatmeal Cookies
3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 egg
1 tsp. orange flavouring
2 Tbsp. water
2/3 cup flour
3 cups rolled oats
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 Terry’s Chocolate Orange, broken into pieces
Cream butter and sugar; beat in egg, orange flavouring and water. Combine dry ingredients and add to wet. Roll into balls and flatten with sugar-dipped glass onto parchment (or greased baking sheet). Bake at 350F for 12-14 minutes. Cool on racks.
