Here is another way to eat your oats in the morning! I adapted these oatmeal “muffins” from a recipe I saw on Facebook. They are also nice for those who cannot use flour but can eat oats.
2 eggs, beaten
1 cup brown sugar
1 1/2 cups milk
2 tsp. vanilla
3 cups rolled oats
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
a few chocolate chips and pumpkin seeds for topping
Mix the wet ingredients together. Stir in the rest of the ingredients and let it sit for 20 minutes before baking. There is no flour in this recipe, and this rest period allows the oats to hydrate. Preheat the oven to 350 degrees F. Scoop the mixture into muffin cup liners. Top each one with a few chocolate chip and pumpkin seeds. Don’t go crazy adding things to the top as it will make it difficult for the muffin to rise. Bake for 30 minutes.
