My family came home after work Friday to the delicious aroma of this cake baking. You can imagine their disappointment when I told them it was for a ladies’ event on Saturday and that they couldn’t have any! As it worked out, there was some left over, so I brought it back home for their munching pleasure.
It is an easy, no fuss, no muss cake to make, and perfect flavours for fall.
2 cups flour
1 1/2 cups sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
Combine the dry ingredients and stir together
3 eggs
1 cup sour cream
1/2 cup butter, melted
2 tsp. vanilla
2 apples, peeled and diced
Lightly beat the eggs, then stir in the sour cream, butter and vanilla. Mix this into the dry ingredients. Stir in the apples. Pour into a greased 9×13 pan.
Crumble Topping
1/2 cup butter, melted
3/4 cup brown sugar
3/4 cup flour
1/2 tsp. cinnamon
1/4 tsp salt
Combine the crumble topping ingredients, then drop by bits onto the top of the cake batter. Bake for 40 minutes in a 350 degree F oven.
