Taco Spuds

I had some leftover baked potatoes skins (from perogie pizza experiment #1) and decided to also use up some taco meat I had in the fridge. Taco Spuds were the result of their union. I added cheddar, loads of sour cream and green onions to the mix. I could literally eat this for breakfast, lunch or dinner. Yum!
