This tastes like a crumble, but has the structure to shape into bars. So easy. If you wanted, you could serve it with a scoop of vanilla ice cream…if, you know, you HAD to.
Filling
Combine and set aside:
1 lb chopped strawberries
1/4 cup sugar
1 tsp. cornstarch
Crust and Topping
Using your hands, rub the following ingredients together:
1 1/2 cups flour
1/2 cup brown sugar
1/2 cup butter
1/2 tsp. baking powder
1/4 tsp. salt
Add to the flour mixture:
1 beaten egg
1/2 tsp. vanilla
This adds a bit of flavour and structure.
Grease a 9×9 pan and press 2/3 of the flour mixture into the pan as the crust. Add the strawberry filling. Top with the final 1/3 of the flour mix. Just crumble this over the top. No need to press it.
Bake in a preheated 375 degree F oven for 40-45 minutes. Cool completely and slice.
