Pasta with Leeks and Italian Sausage

This is a tasty non-tomato based pasta. It’s always good to have several pasta ideas in your pocket! Quick, filling food.

3 Tbsp. olive oil
3 large leeks, cut in half and sliced
500 grams Italian sausage
4 cups pasta shells
1 1/2 cups grated Asiago cheese
1 clove of garlic, minced
1 handful spinach leaves
1 1/2 cups frozen peas
black pepper
juice of 1 lemon

Cook the pasta as on package directions.

Remove the sausage meat from the casings and fry until browned, breaking up the pieces. Remove from pan.

If necessary, add the olive oil to the pan and sauté the leeks until soft. Add the garlic just as the leeks are finishing cooking.

Add the peas and spinach and remove from the heat. Return the sausage to the pan and stir the contents into the drained pasta, along with the lemon juice and black pepper to taste.

Toss with the grated cheese.
