Chicken Cranberry Rolls

As a kid, one of my favourite meals made with leftovers were my mom’s chicken and cranberry rolls. They are good eaten cold as a lunchbox treat, but are even better hot with chicken gravy running down the sides. Comfort food at its finest 🙂

Bread Dough (I do this in the bread machine)
1 1/4 cup of milk
1 egg, beaten
2 Tablespoons butter
2 Tablespoons sugar
1 tsp. salt
3 1/2 cups flour
1 1/4 tsp. yeast

Filling:
1/2 cup cranberry sauce
2 cups roasted, cooked chicken

Add the ingredients in order and set bread machine to dough option. When the cycle is complete, roll the dough into a rectangle, about 1 cm thick. Spread 1/2 cup of cranberry sauce over the dough. Top with an even layer of the chicken.

Roll lengthwise and cut into 3 cm slices.

Place on a parchment-lined baking sheet, cover and let rise for 20 minutes. Bake for 20 minutes at 350 degrees F.
