This is my favourite carrot cake recipe. It is moist, tasty, and makes a 9×13 cake.
Cake:
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1/2 tsp. cinnamon
1 tsp. nutmeg
3 eggs
3/4 cup oil
1 tsp. vanilla
3/4 cup sugar
3/4 cup brown sugar, packed
2 1/3 cup carrots, grated
Preheat oven to 350 degrees F. Grease and flour a 9×13 pan.
Beat eggs, oil, vanilla, sugar and brown sugar until well combined. Mix dry ingredients and then add them to the wet. Combine and then stir in the carrots. Bake for 40 minutes.
Icing:
250 g cream cheese
1/4 cup butter
1 tsp. rum
1 cup icing sugar
Beat butter and cheese until well combined. Beat in rum and icing sugar. Spread on cake.
Looks delicious! Adding a touch of rum to the frosting is a good idea. I’m going to try it!

Just wanted to let you know that I made this carrot cake for dinner guests over the weekend. It was fabulous. Much lighter in colour than my usual carrot cake recipe and the touch of nutmeg made it special.
