His is my summer “cheat” trifle. I use commercial sponge instead of making my own and I use Birds custard powder to make the custard.

500 grams fresh strawberries
1/2 cup strawberry jam
1/2 cup sherry
300 g sponge cake
Birds custard (2 1/2 cups milk, 3 Tbsp. sugar and 3 Tbsp. custard powder. Stir together and bring to a boil)

1 cup whipping cream (whip until starting to thicken and then add 1 tsp. vanilla and 1 Tbsp. sugar)

I do two layers of each item starting with custard, then cake, sprinkle cake with sherry, add strawberries and jam. Repeat these layers, then add the whipped cream to the top.
