I came up with this rub to add flavour to chicken breast meant to top salads. It is a “neutral” bit of zip (can zip be neutral?) in that goes with pretty much any salad dressing. Cook up the chicken ahead of time and dole it out on whatever sort of salad you choose.
1 tsp. smoked paprika
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. chili power
1/2 tsp. salt
3 chicken breasts
The amount above makes enough for three chicken breasts, but you can also make up a larger jar of it to have on hand.
Rub the spices onto the chicken . I cook it on the grill with indirect heat (high heat on the opposite burner, medium low on the chicken side) so it cooks quickly and stays moist inside.
