Vegetable Beef Barley Soup
1 Tbsp oil
2 cloves garlic, minced
1/2 cup chopped onion
3 ribs celery, chopped
3 medium carrots, chopped
4 cups beef broth
1/4 cup barley
2 cups leftover roast beef, cut in bite size pieces
In a large pot, heat oil; sauté garlic, onion, celery, and carrots, for about 8 to 10 minutes, or until softened. Add broth, barley, and beef; and bring to a boil. Cover, reduce heat and simmer soup for 45 to 55 minutes, or until barley is tender, stirring occasionally.
Hmm, that reminds me of a stew that my grandmother used to make. Love the smell of celery in it, will be trying this soon!
