Tortellini Soup is simple, hearty and delicious. I would not make this in a slow cooker as the pasta and spinach would be mush, but I used one transport mine to a soup potluck to keep it warm for a few minutes. Hence the photo.
Here is how you make it:
Fry:
5 Italian sausages in a pot. Remove when nicely browned, and slice. Take excess fat out of the pot.
Add:
3 diced tomatoes, 1 tsp. of basil, 1/2 tsp. lemon pepper and stir up the brown bits from the pot.
Add:
two litres of chicken broth and return the sliced sausages to the pot and simmer for 10 minutes.
Add:
half a package of tortellini and cook for another 5 minutes.
Add:
three good handfuls of spinach just before serving.
