
I think I am at the end of my quest to find the best almond croissant in Calgary. The almond croissant at Edelweiss are different than the French pastries I have covered so far in our quest – the winner there – La Boulangerie. The pastry is more to the Danish pastry style – still lamination in the dough, but a different texture. After baking they slice the pastry and do a thin layer of almond paste from end to end, so you don’t spend half of your pastry-eating-adventure searching for the almond center. This is a winning feature. It is not overly sweet, which is nice. One of these with a morning coffee in the garden is about a cheery as it gets. This may be my favourite almond croissant.
