Shrimp Ramen with Onion and Asparagus

This is a beautiful and simple spring meal. I use the millet and brown rice ramen sold at Costco, but any ramen will work.

For two people:

2 squares of the noodle portions in the bag

2 cups of uncooked shrimp

1 small onion, sliced

7-8 spears of asparagus, cut and lightly steamed

1-2 Tablespoons soya sauce

1 tsp each of grated ginger, garlic and sriracha sauce 

Boil water for the ramen, and prepare according to package directions.  Cut the asparagus into two-inch pieces and lightly steam in the microwave. Saute the sliced onion in a tablespoon of olive oil. When soft, add the ginger, garlic, and sriracha.  Add the shrimp and cook until pink.  Add the soy sauce, drained noodles and asparagus to the shrimp and toss until all the ramen is coated with the sauce. Delish!
