Lemon Mousse

This is a very light, refreshing summer dessert that contains only 4 ingredients (plus water) and can be made in about 10 minutes. You can top it with fresh fruit for extra summer flavour.

1 Tbsp. cold water
1 tsp. gelatin
2 Tbsp. boiling water

In a small bowl, sprinkle the gelatin over the cold water and let sit for a minute to soften. Add the boiling water and stir to dissolve the gelatin.

Juice of 1 lemon
1/2 cup sugar
1 cup whipping cream

In a large mixing bowl, add the lemon juice, sugar and whipping cream. Don’t worry, the cream does not curdle. Whip until stiff peaks form. Beat in the gelatin mixture until combined. Portion into 5 ramekins and refrigerate for a couple hours so it can set up.
