This is a recipe passed to me by a friend in hopes that it would be part of the Cookie Day list. It was, and we were incredibly happy with the result. Delicious!!
1 1/2 cup butter, softened
1 cup sugar
1 tsp. vanilla
3 cups flour
1/2 tsp. salt
1 Tbsp. ground cinnamon
1 1/2 tsp. ground ginger
3/4 tsp. ground cloves
Cream the butter and sugar until fluffy. Add vanilla. Mix together the dry ingredients, then add them to the butter, mixing only until it just comes together. (Over-beating will make the cookies tough.) Divide the dough in half, roll into logs, wrap in plastic and chill. (We rolled ours in sprinkles, but they didn’t stick very well.)
Slice logs into 1/2″ slices. Bake in a preheated 375 degree F oven for 15-18 minutes.
