Sausage Spinach Sandwich

There are lots of ideas for making sausage sandwiches. This is one I put together this week after scanning my fridge for likely suspects. When I buy sausages for this sort of thing, I usually buy a large bunch, remove the casings, cook it up and freeze it in meal-sized portions, so sandwiches are quick to make. I was really pleased with how this one came together and will definately add it to the rotation.

1 1/2 cups sausage (removed from casings and cooked)
1 small onion, chopped
1 cup grape tomatoes, cut in half
2 handfuls spinach
1/2 cup crumbled feta
2 long bread rolls ( I used gourmet hot dog buns from Cobbs)

Remove casings from sausage and cook. (If you are working from frozen, just thaw and heat in frying pan.) Add the onion when the meat is mostly cooked (or re-heated). Cook the onions until soft. Add the tomatoes and cook until they start to soften a bit. Add the feta and then the spinach. It will begin to wilt in a minute or so. Take it off the heat and add to toasted buns.
