Orange Almond Loaf

I made these as mini-loves to send home as Easter loot bags for dinner guests to take home. They seems to go over well. Once recipe makes 3 mini-loves or 1 regular sized one.

Loaves:

1/4 cup melted butter
3/4 cup brown sugar
2 eggs
1/4 cup sour cream
1 tsp. vanilla
zest of one orange
1/4 cup orange juice
1/2 cup milk
1 Tbsp. vinegar
1/2 cup ground almonds
1 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

Grease your loaf pan(s) and preheat the oven to 350 degrees F.

Cream the butter and sugar until fluffy. Beat in the eggs. Add the rest of the liquid and stir until smooth. Combine the dry ingredients and then mix until batter is just combined. Bake for 35- 50 minutes depending on the size of your pan. A toothpick should come out cleanly when you poke the cake. Remove from pan when cool.

Drizzle:
1 Tbsp. orange juice
1 Tbsp. cream
1/2 cup icing sugar
1/4 cup sliced almonds, toasted

Mix together and drizzle over the loaves (loaf). You can add some sliced almonds to the top if you like.
