Sausage Vegetable Soup

I made buns on the weekend, so wanted some soup to go with them. I’ve made this one for years. The better the sausage, the better the soup flavour. This soup has a heartiness that doesn’t require a long cooking time.

Yes, the photo is taken on the deck. I was trying to cool the lot of it to put in the fridge. Since it still looks like this outside, it is a giant fridge/freezer. I digress… The recipe is below.

2 tsp. oil
1 onion, diced
1 cup carrots, diced
1 1/2 cups potatoes, diced
2 cups cabbaged, shredded
450g garlic sausage, diced
796g can diced tomatoes
1 cup canned chickpeas
4 cups beef stock
1 Tbsp. sugar
1/2 tsp. paprika
1/2 tsp. black pepper
1/2 tsp. salt

Cook the onions in oil until soft. Add the sausage and cook 5 minutes. Add the rest, cover, and bring to a boil. Simmer 40 minutes until vegetables are cooked through.
