This is a “cheat” version of macaroni and cheese. Instead of making a white sauce and adding cheese before baking, I just add soft cheese, grated cheddar and milk to the boiled and drained macaroni. Pour into a casserole and add the bread cubes to the top. Just a quick broil to brown the bread cubes and then sprinkle with crumbled bacon. It is not as saucy, but the flavour is nice.
600 g macaroni
150 grams garlic and herb Boursin cheese
100 old cheddar, grated
1/4 cup milk
2 slices bread, cubed
4 slices of bacon, cooked and crumbled
