This is a refreshing summer salad that goes with anything from fish to burgers to sandwiches.
1 cucumber, diced
2 cups blueberries
3 green onions, sliced
2 Tbsp. minced parsley
2 sprigs mint, leaves stripped off stems and minced
zest from 1 lime
2 Tbsp. peach vinegar*
1 Tbsp. olive oil
Cut the cucumber to blueberry-sized pieces. Combine everything together and serve. *You can use another sort of flavoured vinegar or simply lime juice if you don’t have peach vinegar.
