We do love our biscotti in this house. Here is my latest experiment using our basic recipe and changing up the flavours.
2/3 cup butter
1 1/2 cup sugar
4 eggs
2 tsp. orange extract
zest of 1 orange
4 cups flour
4 tsp. baking powder
1 cup pecans, chopped
1/2 cup caramel chips
Eggwash
1 egg yolk
1 Tbsp. milk
Cream the butter and sugar together. Add the eggs, one at a time. Add the extract and zest. Combine the flour and baking powder and add to the butter mixture. Stir in the pecans and caramel chips.
Divide dough into 4 pieces. Shape piece into 9x2x1½-inch logs. Place logs 4 inches apart on two cookie sheets with parchment. Stir together 1 beaten egg yolk and 1 tablespoon milk. Brush egg mixture over logs.
Bake logs in a 375 degree F oven for 25 minutes. Cool on sheet 30 minutes.
Cut each log diagonally into half-inch slices.
Lay slices, cut side down, on the parchment-covered cookie sheets you just used. Bake in 325 F oven 8 minutes. Turn slices over. Bake 10 minutes more or until crisp and dry. Transfer to wire rack to cool and firm up.
