Carrot Muffins

This is another muffin that improves with sitting. They are packed with carrots and orange juice. We enjoy them split in half and topped with butter.

2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
3/4 tsp. allspice

Combine the above. Stir together and set aside.

3/4 cup orange juice
1/2 cup melted butter
1/2 cup sugar
1 egg, lightly beaten
1 1/2 cups finely shredded carrots

Beat the egg, orange juice, melted butter and sugar together. Add the dry ingredients and mix until mostly combined. Add the carrots and stir together. Do not over mix. Spoon into muffin liners, or greased muffin cups until 3/4 full. Bake in a preheated 400 degree F oven for about 15-20 minutes.
