Ï like to think of quesadillas as a loadable grilled cheese. Not only do they make a quick lunch or dinner, they are also really useful for using up little containers of leftovers! Have a bit of cauliflower? Some sautéed peppers or onions? Chuck them in. Add some refried beans, chicken and cheese and you have the makings of hot, gooey goodness, ready to dip in a bowl of salsa. Sharable comfort food!
