Helping to make sandwiches for a funeral last week, we couldn’t help noticing that egg salad sandwiches were flying off the platter. It was the sandwich of choice for most people. Sometimes, I go for long spells where a particular food is “forgotten about”. I was glad for the reminder of this one as it is very good. I never measure anything for this, but I like to add Miracle Whip, mustard, paprika and celery salt to the mashed eggs in my sandwich.
