This is a really simple slaw that has a simple oil and vinegar dressing. It holds well in the fridge and is one of my favourites.
4 carrots, grated
1/4 red cabbage, thinly sliced or grated (I use the slicer on the food processor)
1 cup pine nuts
1/2 cup dried cranberries
2 Tbsp. olive oil
4 Tbsp. apple cider vinegar
1 tsp. salt
1 Tbsp. sugar
a few good grinds of pepper
Combine it all and let sit in the fridge a few hours, tossing occassionaly to let the flavours combine.
