One of my sisters-in-law got me going drying tiny tomatoes. We consider them crack for tomato lovers. They have an earthy, yet sweet and bountiful flavour. I can eat them like popcorn (if I could eat popcorn). They are simple to make as well.
Cut tiny tomatoes in half lengthwise. Spread them out on parchment paper on a cookie sheet, brush with olive oil, and sprinkle with salt and pepper. Bake in a 250 degree F oven for a couple of hours (this batch took 2.5 hours as they were especially juicy tomatoes) until they are mostly dry. Cool and enjoy!
