Tortellini Salad is a summer meal in a bowl. When I want something light but with some substance, this is my salad.
1 pkg of cheese tortellini, cooked
12 small peppers, cut similar size to the tortellini
2 cups of cherry tomatoes, halved
2 handfuls of peas in the pod, cut in thirds
1/4 cup oil (mine is herbs de provence)
1/2 cup white balsamic vinegar
salt and pepper to taste
Pour the oil and vinegar/salt and pepper mix on the hot, drained tortellini, toss and let cool. Add the vegetables and more oil or vinegar if required (the tortellini sometimes absorbs more than other times). Toss and dig in!
