Yesterday I was looking at my prolific crop of chives and made plans to use some for breakfast today. It is is a warm breakfast for a cool, relaxing morning.
For two people:
4 slices of bacon
2 slices of bread, cubed
1/4 cup milk
1/4 cup grated cheddar
1/4 tsp. salt
Cut the bacon into bite sized pieces and fry until cooked. Beat the eggs and add the milk, salt and pepper. Grease two oven-safe individual casserole dishes and add the cubed bread, fried bacon, egg mixture, chives and cheddar. Bake uncovered in a 400 degree F oven for 30 minutes.
You can also add mushrooms, spinach, onions, peppers and different herbs or cheeses, but I kept it simple this morning.
