Sausage, Pepper and Onion Sandwich 

This is an easy, warm sandwich to make and share.  Take some of the bread out of a baguette (save for breadcrumbs, or snack on it as you go).

Fry some sausage (out of the casing) until cooked. I used a mild Italian sausage. Remove from the pan and sauté a red onion and a yellow pepper in the remaining fat. Season with salt and pepper.

Fill one side of the sandwich with a layer of sausage and a layer of onion and pepper. Grate some Monterey Jack cheese and spread over the other half of the baguette. Broil for a minute or so until the cheese is melted.

Press the sides together and cut the sandwich into slices as you would slice a baguette. Enjoy!
