Leek and Cheddar Bake

Comfort food! 

4 slices of herbed bread
3 eggs, beaten
1 cup of milk
1/2 cup cream
1 tsp. herbs de Provence
2 leeks, washed and sliced
1 Tbsp. oil
4 oz. grated cheddar cheese
salt and pepper

Sauté the leeks in the oil until soft. Put the bread in a greased casserole. Spread the leeks on top of the bread, then sprinkle the cheese on top. Mix together the milk, cream, eggs, herbs de Provence, salt and pepper. Pour over all. Bake for 45-50 minutes in a preheated 350 degree F oven.
