Blueberry Muffins 


These are our standard blueberry muffins. If we make them on a weekend morning, we sometimes add the crumble topping for an extra treat.

1/4 cup butter
1/2 cup sugar
1 egg
3/4 cup milk
1 3/4 cups flour
1 Tbsp. baking powder
1 tsp. vanilla
1 cup blueberries (frozen is ok)

Mix dry ingredients and set aside. Cream butter and sugar. Add egg and beat until smooth. Add milk and vanilla. Add dry ingredients. Mix lightly. Stir blueberries into batter. Fill muffin cups (add topping if desired) and bake at 400 F for 20-25 minutes. (If you use frozen blueberries, baking time will be closer to 25 minutes.)

Crumble Topping:
1/4 cup flour
1/2 cup brown sugar
1/4 cup butter
1/2 tsp. cinnamon
Stir the flour, brown sugar and cinnamon together. Rub the butter into it until it holds together. Sprinkle over muffin batter before baking.
