These are flavourful savoury tarts that can be served warm or at room temperature. I always use prepared tart shells for these, but you could make your own shells if you are energetic ;
prepared tart shells
5 cloves of garlic
1/2 tsp. basil
1/2 tsp. lemon pepper
1/4 tsp. salt
Sauté garlic with tomatoes and seasonings.
Simmer until most of the liquid has evaporated.
Put a slice of Parmesan cheese in each tart shell. Add a layer of tomatoes, then a slice of mozzarella. Bake at 375 degrees F for about 20 minutes or until the crust is lightly browned and the filling is bubbling.
