Today’s Advent Cheer is a red and white peppermint cookie. This is not one that I make every year, but my girls are quite fond of them. They are not perfectly rolled, but the flavour is the same 😉
Peppermint Pinwheels
1/2 cup shortening
1/2 cup butter
3 cups all purpose flour
1 cup sugar
1 egg
2 Tbsp. milk
1 tsp. vanilla
1/2 tsp. baking soda
1/4 tsp. salt
3/4 tsp. peppermint extract
Paste red food colouring
Beat shortening and butter in a mixing bowl till soft. Add half the four, the sugar, egg, milk, vanilla, baking soda and salt. Beat; then beat in the remaining flour. Divide the dough in half. To one half, add the peppermint and food colouring. Between two sheets of waxed paper, roll each portion to a 12×11″ rectangle. Invert red dough on plain dough. From the long side, roll up jelly roll style, removing the paper as you go. Cut roll crosswise in half. Wrap and chill for 4 hours. Cut the dough into ¼ inch slices and place 2 inches apart on ungreased cookie sheet. Bake at 375ºF for 8-10 minutes. Makes about 48.
Totally sending this to my aunt so she can make them for our Christmas dinner!

Thank you. I love poinsettias. I didn’t buy them for a few years as they are toxic to cats. Two years ago a vet told me the cat would have to eat the whole plant to even feel nauseous, so i have been enjoying them again.
